I hope everyone had a great weekend! I was solo parenting, since the hubs was on a weekend ski getaway, but the boys and I had lots of fun! I’m excited to head back to Vermont this coming weekend to celebrate my (gasp) 40th birthday. It’s Maple Madness in Woodstock, VT, so there’s sure to be lots of maple syrup tasting and some great recipes coming home! Here’s our meal plan for the week:

Monday: Tuscan Kale and Lentil Soup with Multigrain Bread.

Tuesday: Slow Cooker Herb Butter Chicken and Veggies with rice pilaf (I save time by buying the mix!).

Wednesday: Sweet Potato Chickpea Burgers with oven baked steak fries. I’m going to serve these with the Chosen Foods Harissa avocado mayo that I’m currently in love with! 🙂

Thursday: Easy Oven Baked Spicy Chicken Tacos with Mexican rice (brown rice mixed with your favorite salsa!).

Friday: Pesto Chicken Caprese Flatbread with Garden Salad. This recipe calls for shredded chicken, so it would be a great way to use rotisserie chicken leftovers!
