Verde Farms with Chimichurri Sauce

While we don’t eat as much red meat as we used to, our family loves to indulge in a great steak or burger now and then. Since we eat less red meat, we prefer to spend more on high quality, organic, grass-fed beef. I was so excited to discover Verde Farms, a Boston-based provider of organic, grass-fed beef! I had seen it in my local independent grocer, so I was excited to chef up a chimichurri to prepare with the strip steaks we received (see recipe below)!

About Verde Farms

Founder, Dana Ehrlich, came up with the concept of Verde Farms while visiting the Pampas region of Argentina. Impressed by the beautiful scenery and the happy free-range cattle feasting on local grass, he decided to find a way to bring beef from these cattle to the U.S. The result was Verde Farms!

Institutional farming and livestock has resulted in cattle in the U.S. being confined to feed lots and given feed that consists largely of grains, rather than the grass they would naturally eat. Because they are kept in such close proximity, they are also frequently given antibiotics to treat and prevent herd infection.

In contrast, Verde Farms meat is organic, grass-fed and available in stores like Whole Foods, Wegman’s and locally at Boloco restaurants in the Northeast (in addition to wholesale). In addition to tasting great, there are many health benefits from choosing organic, grass-fed beef.

Health Benefits of Grass-fed Beef

Grass-fed beef is lower in total fat, saturated fat, and cholesterol. Additionally, it is 20% lower in calories than grain-fed beef. Grass-fed beef is also higher in Omega-3 fatty acids (which are beneficial for cardiovascular health), Conjugated Linoleic Acid (CLA), and vitamins A and E. When you choose grass-fed AND organic (like Verde Farms), you can feel comfortable that cattle are grazing on grass that has not been treated with pesticides or synthetic fertilizers.

Chimichurri Sauce

Ingredients

  • 1 cup fresh parsley (if you use dried, adjust according because it will usually require less)
  • Juice from 3 lemons
  • 2/3 cup avocado oil
  • 3 tbsp red wine vinegar
  • Pinch of cayenne pepper
  • 1/2 medium-sized red onion
  • 4 cloves garlic
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Add the onion and garlic cloves to the food processor and pulse until minced. Add the remaining ingredients and process until combined. Place the strip steak on the grill and coat with the chimichurri sauce. Continue to cook until desired doneness, basting as necessary.
