We are definitely in throes of growth spurts with the two older boys (almost 6 and almost 8), and it seems like they never stop eating! I seriously believe I will need a separate job just to fund our grocery bill when they get to be teenagers! Since they eat non-stop and I don’t always want them raiding the pantry for snack foods, I am trying to find some other snacks I can make ahead. This yogurt, berry and granola breakfast trifle fits the bill!
I have sort of a love affair with trifles. Maybe it’s the trifle dishes or how easy they are to make (and they look complicated!), whatever it is, I love ’em! I usually make dessert trifles, but I decided to think outside the box and make this breakfast trifle. I think I’m onto something…
The yogurt, berry, and granola trifle pulls double duty as a quick and healthy breakfast that can also be an anytime snack for the boys. They loved it, and I think it lasted maybe a day and a half in the refrigerator! It would also be an easy breakfast to make if you have company or need to bring something to a brunch. It looks beautiful, but definitely doesn’t take long to prepare. Here’s how to make it:
- 2 quarts of yogurt
- 12 oz. bag of granola
- 2 quarts of fresh strawberries
- 1 pint of blueberries
- 1 pint of blackberries
- Start by spreading a layer of yogurt on the bottom of the trifle dish.
- Sprinkle a heavy layer of granola.
- Layer your fresh berries on top of the granola.
- Repeat layers until you reach the top of the trifle dish.
