It gets really hot and humid here in the summer, so the last thing I feel like doing is turning on the stove or oven to cook dinner! Thankfully, there are much easier and healthier options like salads and bowls that require little to no prep like this Lemon Pepper Chicken Bowl!

These zesty lemon pepper chicken bowls are great for lunch or dinner and full of protein and veggies. You can definitely change up the types of vegetables you use in the bowl based on your personal preference. I chose carrots, bell peppers and broccoli because the boys love those vegetables too. Quinoa makes a great base for the bowl, since it’s also higher in protein and is a great source of fiber.

The lemon and black pepper adds great flavor to this bowl and is a perfect complement to the veggies in this bowl. To make your own, just follow the recipe below:
- 4 StarKist Chicken Creations pouches in Zesty Lemon Pepper flavor.
- 1 cup of quinoa cooked.
- 3 carrots peeled and sliced
- 2 bell peppers (orange, red or yellow)
- 1 broccoli crown steamed
- 1 bunch of green onions, chopped for garnish
- Sauté the vegetables in a little olive oil ahead of time for easy bowl prep!
- Scoop of 1/2-3/4 cup of cooked quinoa in the bottom of each bowl
- Artfully arrange veggies in vertical rows over the quinoa.
- Eat and enjoy! It's that easy!
